Beef Medallions, Squashed Potatoes and All Green Salad - Momjo Eats

Back by popular demand, the #MomjoMamas got into the kitchen and cooked up a storm on the first episode of "Momjo Live Eats" on Wednesday, June 13, 2018 (find full episode here).

We managed to source only the best, freshest ingredients from Walmart.ca by using their online grocery order and pick up service. This service is a total game-changer for busy moms as it makes life so much easier. If you have not yet tried it - get shopping!

On the menu was beef medallions, squashed roast potatoes and an all green salad. Something for everyone in this perfect meal, especially in time for the summer season!

BEEF MEDALLIONS

We took inspiration from our friend, Google, and went with a classic grilled fillet medallion with a delicious chimichurri-style sauce. The beef medallions were Walmart's AAA Angus Beef Striploin Steak Medallions, and got a 10 out of 10 all round! The recipe can be found here.

ALL GREEN SALAD

This green salad has become a favorite in both our households, as we love how fresh, delicious and creative it can get!

Ingredients:

For the salad: ANYTHING GREEN, for example:

  • Romaine lettuce

  • Asparagus (blanched in hot water)

  • Snap peas

  • Avocado

  • Cucumber

  • Spring onion

  • Green apple

  • Snow Peas

For the dressing:

  • 1/4 cup oil

  • 2 Tablespoon white vinegar

  • 1/2 teaspoon salt

  • Pepper

  • 2 Tablespoons sugar

  • 1 Tablespoon chopped parsley

Method:

Wash, chop and assemble all salad ingredients in a bowl.

Shake up and mix all dressing ingredients and pour over salad, then toss.

SQUASHED ROAST POTATOES

These potatoes are ALWAYS a hit, and so simple to make! We both love to cook, as long as what we are making fulfills one essential criteria - it's easy to make! Inspired by Sharon Glass' squashed potatoe recipe, this recipe is super simple!

*We modified it to use baby potatoes, but regular potatoes work just as well!*

Ingredients:

2 bags of unpeeled Yukon Gold Mini Potatoes

Olive oil

Coarse salt

Pepper

Fresh or dried rosemary

Method:

Boil potatoes whole with their skin on until they are firm but soft enough to lightly mash. Preheat oven to 200°C.

When soft enough, use a potato masher to squash the potatoes and place them on a lined baking tray. Drizzle potatoes with olive oil, and season with coarse salt and pepper. Sprinkle with freshly/dried rosemary.

Place baking rack in the upper part of the oven. Bake until golden and crispy – at least 40-50 minutes. They should be as crispy and crunchy as possible.
