Overnight Oats Recipes - Two Ways
They say breakfast is the most important meal of the day. For me, every meal is important since I love eating so much, but starting the day off right really sets the tone for whether I will have a healthy or not-so-healthy eating day. Then I tried #overnightoats - I started preparing them for myself a few months ago and quickly understood what all the hype was about - now I am hooked! Whether you make them quick and easy, like I do most days, or you make them "fancy" for when your friends come over for brunch - they are always a hit!
Here are my two favourite recipes for overnight oats. One for everyday deliciousness - another for special occasions! Enjoy!

Simple Overnight Oats
Half cup rolled oats
1 cup milk of choice
1 tablespoon chia seeds
1 tablespoon hemp seeds
1 teaspoon maple syrup
Fresh / dried fruit / nuts
Method
Cover oats with milk, add chia and hemp seeds and mix well. Leave overnight in fridge. Add fruit / nuts as desired before eating. Serves 1 person.
Fancy Overnight Oats (Bircher Muesli)
Ingredients:
2 cups rolled oats
1 cup (8 fl oz) apple juice
1 cup coarsely grated apple
Half cup natural yoghurt
Juice of 1 lemon
Half cup sliced peaches/nectarines
Quarter cup mixed berries
2 tablespoons honey
Method:
Place oats and apple juice in a bowl, soak for 1 hour or overnight. Add grated apple, yoghurt and lemon juice to oat mixture and mix well. Spoon into serving bowls and top with fruit. Drizzle with honey. Serves 4 people.
