Kale Salad Done Right

I had a big bag of kale staring at me from my fridge for the past week. Usually I love to get creative in the kitchen, but lately I don't seem to have my culinary momjo...

Luckily I got inspired by a close friend and her recipe for what she calls the "kitchen sink" salad. That means you can through in anything you have or want - easy, right? Right.

Ingredients:

Salad:

Kale

Peppers

Cucumber

Shredded carrots

Dried Cranberries (or raisens)

Hearts of palm

Avocado

Edamame beans

Pumpkin seeds

Sunflower seeds

And now for the easy part...

Dressing:

Olive Oil

Salt

Pepper

Method:

Soak the kale in salted water for at least 20 minutes. Dry and chop and layer as the base of the salad (I like to use a glass bowl so you can see all the beautiful colors).

Chop and add all the vegetables and seeds, and anything else you like!

Drizzle with olive oil, and sprinkle salt and pepper to taste.
